A sweaty cyclist arrived at Mugaritz, hoping to boost his energy and get back on the road, but he left just as hungry as when he arrived.
At the beginning, we only served diners who had made a reservation in advance, even when the dining room was empty and even if it meant putting the business’s viability at risk.
Our team still remembers that denial of service, which came from our naïveté, a certain degree of adolescent irreverence, and a large dose of nervousness.
