The challenge of surprising those who surprise us every day

At Mugaritz we have a deep respect for science and scientists. Science is indispensable for the advancement of society, and we are privileged to be able to learn from it.

Andoni Luis Aduriz and Ramon Perisé went to Harvard University in October 2015 with one objective: to surprise those who surprise us every day.
 
Through a lecture titled “Science and Emotions—Delicious or Disgusting?”, we spent two days demonstrating our magic tricks, taking our irrintzis (sustained vocal calls delivered in a single breath by shepherds in the mountains, and which Basques use to express joy) to American soil. 
 
We offered a tasting of blued brioche (made through colonization) to show the magic of fermentation, as eggs (some real and some made of mannitol) flew through the air in an auditorium filled with scientists.
