The Candy Project
What is candy? When and how is it consumed? What is the predominant flavor of candy in your country? Where and how is it sold? What kind of candy left a mark on your childhood?
All historical clues indicate that historically candies were used because of their nutritional value. However, its use has changed and they have became a tool whether to reward or praise. Over time, candies have lost their social use and their ceremonial character. Nowadays, they are compulsively consumed in all circumstances and occasions.
Chef Andoni Luis Aduriz and sociologist Iñaki Martínez de Albeniz from the University of Basque Country take the lead of this research with the collaboration of Slow Food International, the University of Gastronomic Sciences (Polenza, Italy) and the advertising agency Dimension. This work will help in the production of a data collection and subsequent analysis and catalogue of candies in a conceptual, organoleptic and nutritional level. This data will provide the information needed to develop a “world map”.
