Mugaritz has signed an agreement to formalize the collaboration between elBullifoundation, Mugaritz and Basque Culinary Center. The objective of this three years agreement is to collaborate with two projects promoted by elBullifoundation: Bullipedia and Sapiens, two initiatives inside BulliLab. The projects will work on the development of knowledge about the history of gastronomy and cuisine, products, culinary techniques, the relation between gastronomy and other disciplines, etc. This will promote the publication of books, specific webs and apps, as well as the decoding of the gastronomic genome and the creative process among other things.

Sapiens is the methodology to investigate the disciplines and know their processes. The contribution of Mugaritz to this project will be very important. It will be the first restaurant showing the gastronomic decoding in which the diner will have lot to do and say. Furthermore, Aduriz’s creativity, as Ferran Adrià has pointed, will add value to the project. The participation of Mugaritz  is called Mugaritz Sapiens Lab and will study the evolutionary analysis of the gastronomic history.
