mars 1998. Il se trouve dans une zone rurale, entour\u00e9 de prairies, de for\u00eats et de fermes. Autrefois, le restaurant \u00e9t\u00e9 entour\u00e9 d&rsquo;une immense ch\u00eanaie dont peu d&rsquo;exemplaires subsistent aujourd&rsquo;hui. L\u2019un d\u2019entre eux, \u00ab doublement centenaire \u00bb, se hausse \u00e0 quelques m\u00e8tres de notre cuisine. Dirig\u00e9 par notre responsable de R&amp;D, le Programme en Cr\u00e9ativit\u00e9 Mugaritz a pour objectif de d\u00e9velopper des capacit\u00e9s cr\u00e9atives \u00e0 partir de l\u2019\u00e9tude et de l\u2019application de la cr\u00e9ativit\u00e9 dans le contexte gastronomique. Atteindre ce niveau de connaissance nous a permis de donner \u00e0 manger la coquille d\u2019un \u0153uf vide, gr\u00e2ce aux moules en silicone et \u00e0 un \u00e9dulcorant connu sous le nom de mannitol. Lorsqu&rsquo;en 2014, le MIT (Massachusetts Institute of Technology) nous a invit\u00e9s dans ses salles de classe, c\u2019est la technique que nous avons choisie pour notre pr\u00e9sentation. Les enfants en rapportent une demi-douzaine de chez eux \u00e0 l\u2019\u00e9cole pour leur faire honneur, avec les professeurs, et que le sucre pousse au plaisir le plus primitif. Des recettes comme celle-ci sont parvenues \u00e0 faire escale chez Michel Gu\u00e9rard, o\u00f9 elles ont atteint une nature virtuose, jusqu\u2019\u00e0 Mugaritz, o\u00f9 nous utilisions une brioche faite maison et la caram\u00e9lisions avec de la cr\u00e8me d&rsquo;amandes et du rhum.
