Diálogos de Cocina

"Diálogos de Cocina" is a biennial international congress that began in 2007 with the goal of linking knowledge from different fields and create multidisciplinary interactions. It is a forum designed for observation that brings together prestigious experts from different fields and from all over the world so they can deliver a message and make attendees ponder on those messages. "Dialogos" is a space where creative synergies are forged.

Simultaneous to the first edition of "Diálogos de Cocina", "Papeles de Cocina" was created. "Papeles de Cocina" is a regular publication edited by Eurotoques, that features thoughts and interviews from some of the most important characters in the international culinary scene. Articles include monographs on products, recipes, historical reviews and opinions on different subjects. "Papeles de Cocina" is compilation of the things that are taking place in the world of gastronomy, but it is also a printed summary of the congress "Dialogos de Cocina".

Eurotoques, the international organization of chefs, which brings together more than 3,500 chefs in 18 countries, has collaborated in the organization of the event since 2007. In 2010 the BCulinary Center, the Faculty of Gastronomic Sciences and the Centre for Research and Innovation into food and gastronomy became involved in the project.
