Mugaritz created a passport to reclaim the independence of its territory. Unveiled during the Best of Gastronomy Congress in 2008, holders of the Mugaritz Republik passport belonged to a nation of emotion.

Some viewed Santos Bregaña’s creation as a notebook in which to jot down their thoughts; others understood that the passport allowed them to travel, collecting stamps for each dish along a unique culinary journey.

Mugaritz is independent, but it is not isolated. Just ask the team when the Internet does not reach the far-flung corners of the mountain where they are busy working on new ideas.
