Mugaritz has a marked cultural identity and maintains strong ties to its geographical environment through its suppliers.Meanwhile, the different customs and forms of expression we have observed around the world have helped us to understand other ways of eating and have fuelled our restless spirit.
At Mugaritz, eating is a path to experience, a path scattered with histories, aromas, textures, flavours, incredible sounds, provocations, uncertainties, games, memories, desires and numerous other pleasurable stimuli.
That is why we create and suggest forms of service that prompt situations in which our diners can give free rein to their senses and interact with only the barest of rules for engaging on a culinary voyage.We strive to transcend the customs that curtail our freedom.
The products we use to create our dishes are sensitive to the weather, the season and the firmness of nature, which means that we are forced to accept whatever these things impose.So although we select our products one by one, we can never tell you what you will be eating in advance because the situation changes every day.
We propose a personalised menu consisting of approximately twenty dishes that sum up our experiences and methods, forged from years of research, hundreds of experiments, and thousands of kilometres on our culinary journeys.
